The only game which has that issue is Samurai Shodown VI. Not only with Spanish, but also with all the other languages besides Japanese and English. This game seems like it was going to be the one with more localizations (Japanese, English, Spanish, Italian, Portuguese, Simplified Chinese and Traditional Chinese) but in the end, I suppose it was rushed in this aspect and it's really only in Japanese and English.
The rest of games that features other languages like Spanish (most SNK games and also some early Sammy games) and Chinese (Knights of Valour) do seem to actually change the game language.
