Porting SA2 retranslated to Dreamcast

Hi I'm interested in learning about rom hacking/translating dreamcast games, so I can port the script from SA2 retranslated to the dreamcast version of the game. This is my first ever attempt at rom hacking and I'm not expecting it to be easy. Hopefully someone can't point me in a direction to start. So far I've dumped the rom but I'm not sure how to open the various file types or if that's even how you go about this. Any help would be appreciated, thank you.

i've seen a few programs around to extract plain files from a disc image and re-pack them in a new one. a program like "GD-ROM Explorer" for Windows might be a good start?

I did use GD-ROM explorer to dump it but after that is where I got stumped. I tried using PVR viewer to open some of the files but I have no idea where to find the subtitle text or what programs I would use to open the different file types to see if I could find it on my own.
