For what it's worth, I was helping a friend setup artwork for openMenu and decided to copy/paste the steps into a public text file:

It's definitely not a clean tutorial, very quick and dirty. However, following along
does work.
A video tutorial for this might be something I consider whipping together one day, though I'm very busy and also not sure if it's worth doing, as all of it is subject to change with new versions and such.

Thanks for this, I’m going to give OpenMenu a try so this is a big help
