Project Justice (also known as Project Justice: Rival Schools 2). The true 3D graphics is the best of any Capcom produced game. If you have not played it, start now!
To compare it to something most DC players know about, it's game play is like the Camcom vs. Marvel 2 or SNK's King Of Fighters 2002 but with great 3D backgrounds. The gameplay is unique as well, not just another "fighter". Capcom got this one right as it is almost a 100% direct port from the NAOMI board. It's still amazing being it does not even get close to pushing the limits of the Dreamcast, but it still looks great.

Deffinitly its one of my favorite games. the team combos are rediclusly awesome and may have better team battling then mvc2 or capvsnk another game that ONLY ON THE DREAMCAST

Aerodancing i : Jikai has some of the most impressive graphics on the Dreamcast. Absolutely stunning. Great game too.

I second that. I thought of answering with PJ as well (read the whole topic first though). Considering their time, many DC games were graphical amazing (hence Shenmue, Sonic Adventures, PJ and Ikaruga; all a different feel and type, but graphical amazing).

I am actually still pretty impressed with all the Sega Sport titles. Especially Tennis 2k2. Obviously Shenmue, Soul Calibur, etc still look great. Another game that I feel holds up well is Skies of Arcadia. Yes the graphics are a little cartoony and the characters a bit blocky but it all just works with that game.

Sega Extreme Sports has some amazing graphics. Great draw distance, huge enviroments and lots of great details.
MDK2 has stood the test of time and aged very well.
