I am thinking about buying UT and wondering if you can change the controls so that they the analog moves the player FWD,Back and strafe left and right. And the right 4 buttons move the directions the player looks/runs in?

Yep you can modify controls in UT. In fact I think that is the default movement but I could be wrong. I know you can make controls exactly like Q3 though.
