Judging from the games that keep track of play time, for me it's PSO, Grandia 2, and Daytona USA

Still fresh in mind when i discovered that PSO was also absolutely ok to be played offline, back in the day.
There was a period when I used to do the bare minimum in real life as then fully immerse into the game;
an experience, close if not better than the Final Fantasy VII one, during the PS1 era

a special mention to the first two games i got with the console, Virtua Tennis and Rayman
played a lot too

Mine would have to be 'San Francisco Rush 2049' between collecting coins and multiplayer with my sisters back in the day.

The next would probably be 'Crazy Taxi.' The first year or two after getting my DC I played this relentlessly. I got so good at the time that I'd run out of passengers when playing with Arcade Rules.

After that, maybe the 'Shenmue' games. They are definitely the longest games I've played for the system, story wide (that and 'Grandia II'). 'Unreal Tournament' is up there. But I also put a lot of time into a few fighters like 'Soulcalibur' and 'Marvel vs Capcom 2.'
