Is there an easy way to transfer saves between VMU and PC?
I feel like I remember there being a 3rd party VMU with a PC link cable... but I'm guessing that wasn't USB? Just curious what my options are for backing up all my VMU saves on PC (and moving them from PC to VMU when needed)?

Buy a sd card adapter. DreamShell is able to copy ALL types of savegames to sd card.

If the save isn't locked like PSO you can upload your saves to email using the built-in email client in the DC web browser. However doing it this way I don't think they will be in the nice VMI/VMS format.

I've actually got an SD adapter, though I haven't gotten it to work yet. Dreamshell doesn't recognize it - I'm guessing (hoping) it's just the SD card I'm trying to use (which is actually one of those SD cards that you stick a MicroSD into). So that might be a good bet.
I'm not sure I understand what that Dream Explorer does w/ PC... I'm guessing you need to somehow have your PC networked to DC via BBA?

...follow-up question. So if I'm able to move a save via Dreamshell/SD Card... will that save work just fine w/ NullDC? Theoretically, I'd be able to move my save between playing a legit game on DC and then load it up in NullDC?

That's an intersting question. I'm not sure on about Dreamcast...
But I tried to do something similar when I was playing Persona on my PS Vita.
So I'd play this on my PS3, and sometimes on my Vita before bed via remote play. I wanted to see how it'd look on my emulator on PC, Since the Vita alllows game save transfers to your pc, I figured it'd be easy, but that particular emulator reads n writes save files differently for some reason. I have no idea if that would apply to Null DC or not, but I wouldn't be surprised if the save file structure is different on an emulator, but that's just a guess on my part.
