I've been getting a lot of japanese games for the PSP recently. Mainly fighters and driving games (since you can work out the controls quickly and require no knowledge of the Japanese language)
I'd like to do the same with the DC (as soon as I am able to burn DC games again. It seems an impossible task atm). Does anyone have a must have game that had a Japan-only release?

Whatever, one of the greatest videogames of all time is LOL or Lack Of Love on DC. It was a japanese only release yet requires no knowledge of japanese to play it.
Other titles that spring to mind are Virtual On(playable without the twinsticks but even better with), Bomber Hehe(demolition simulator no less !), Segagaga(translation available within a few years if you can wait that long
), Densya De Go(train sim which is surprisingly addictive), Tokyo Bus Guide, Napple Tale(superb game which requires some japanese if you want to fully understand the story yet still playable without).
There are tons of japanese fishing, baseball and golf games which are easy to play without any japanese language skills.

I'm surprised you listed Densya De Go. I'm familiar with the series, but assumed I'd need to be able to read the language in order to play it. Same with Tokyo Bus Guide. Pleasant surprise 
I did consider making a website or forum entitled "Fudging Japanese Games", with tips by westerners on what the controls are for various japanese games based on what people have been able to gather. Could help some people

Check out Gundam Federation Vs. Zeon DX. I played the hell out of this game when I first got my Dreamcast. I don't remember needing any Japanese to play it.

Frame Gride is pretty good game. It is playable in japanese but also has a translation imminent if I'm not mistaken.

Zusar Vasar(I can't remember how it's sp'd) isn't a must have game but is certainly an interesting curio.
